58% Pinot and 42% Chardonnay parcels were hand-picked from 20 year old vines on 22 February and 7 March respectively in our vineyard at Charleston. After gentle whole-bunch pressing the juice was clarified then fermented at low temperature to retain the delicate varietal flavours. The wine was aged in bottles on yeast lees with crown seals, and a few hundred are disgorged each summer and given corks and a gold hood, signalling that they are ready to drink! Lemon, apple, strawberry and delicate brioche (yeast autolysis) flavours fill the palate, and with age, honey and brioche notes increase. It is dry, elegant and delicious.
