100% Pinot Noir was hand-picked on the lower slope of our Pinot block from our 20 year old vines on 22 February at 10.7 baumé. The fruit was chilled for two days and then gently whole-bunch pressed to retain bright varietal characters and keep phenolics to a minimum. After settling, the clear juice was fermented to dryness then tiraged and crown-sealed in the bottle that would eventually convey the wine to the table. Only a few hundred are disgorged each summer to ensure that the wine is lively and fresh. Expect a fine mousse with mouth-filling strawberry, turkish delight, musk and brioche, and in later years, honey notes. It has a dosage of 8 g/L.
