Rich and complex in a drier style

We make our fortified wine only in the warmer years. Our tawny solera is made from fruit from the 2021 and 2025 season. It is made from Tempranillo which the Portuguese Port producers in the Douro Valley call Tinta Roriz.
The wine is aromatic and soft because it is made only from free run Tempranillo juice gently squeezed out by basket press. Extraction rates are below 50%. This is not a problem however! The remainder goes off to our vintage fortified stream.
The juice is settled, racked and then vinified at cool ambient temperatures using a weak yeast. This is important since we want to have our wine to finish at a sumptuous 18% alcohol and 12% residual sugar. Fresh brandy spirit of 80% alcohol is added to halt the ferment, and after settling and racking, the wine spends the rest of its development in barrels made by the legendary Graeme Kassebaum. The wine is pale amber, elegant and full of delicate fruit flavours that will develop further in the barrel. In a few years gorgeous wood volatility (“rancio”) flavours will become more prominent.
When you are ready for your next bottle, call in advance and we’ll have one freshly decanted from the barrel. That’s the way to drink tawny.
