An aromatic super tasty wine

(750ml) Adelaide Hills, SA

With numerous people telling us that all wine is too sharp and dry for them we made an aromatic super tasty wine from our Malvasia Blanco and Grenache Gris. The Grenache Gris has lovely apple, pear and yellow plum notes with a hint of fennel and this provided a rich backdrop for the bright floral notes of Malvasia of rose and honeysuckle. A few months in a lovely, seasoned French oak barrel have given it a little vanilla and spice.

To achieve the sweetness that you will see in this wine (and to balance the high natural acidity of these two varieties), we fermented the juice at low temperature and then halted it with a few days of super-chilling to leave just the right amount of residual sugar.

We hope you’ll find that the sweetness balances the heat of spicy dishes but complex and entertaining for wine buffs who wish to enjoy it on its own.
